Bianca-cosma-over-under-coffee

Bianca Cosma - Operations & Coffee Training

  • Bianca joined the Over Under team from another specialty coffee brand in June 2021 as General Manager of our Ladbroke Grove store.

    Not only did she bring big company energy to our small business, but she also brought lots of big ideas and challenged us on the way we did things. She helped us up our game when it came to our training structure and helped implement and advocate for this across the business.

    Bianca has built one of our strongest teams at Ladbroke Grove. Not only do they have an amazing team culture but many of her in-store staff have received promotions following her great leadership.

    When we opened our South Kensington and Gloucester Road stores in early 2022, she helped train the new managers for the stores and supported the openings from an operational perspective.

    We saw huge potential in Bianca as she was always upbeat, organised, diligent, and knew a lot about the back end of the business. After working in the world of coffee for over 5 years, coffee training came naturally to Bianca, so she’s also since spent a lot of time with our roasters at Assembly Coffee in Brixton.

    Bianca is well respected among the team and is now thriving in her new role as Operations & Coffee Trainer.

George Thomas - Head of Food

  • George joined us from Bar Elba in July 2021 after being referred by a previous Over Under manager due to his wealth of experience in hospitality.

    He joined the Ladbroke Grove team and completely turned the kitchen around in a short space of time. George has a fantastic go-getter attitude and has continued to step up, taking on more responsibility and working closely with the head office team.

    As Head of Food, George implements our new food menus and is responsible for training the team which is key in providing quality and consistency across our food at all Over Under sites. George also led the team in developing our recent toastie menu which was a huge success.

    Not content with just wowing on food, George is also now fully trained in coffee and is one of our top baristas.

    George is well-loved by customers and the team alike. We can’t wait to see what the future has in store for him.

Claudia Raddon - Cluster Manager

  • Claudia joined the Over Under team in early 2020. She started in our original Earl’s Court store and worked between there and our West Brompton site.

    At first, Claudia was a shy 20-something, but after a few months, she asked if she could make the move to our Wandsworth store to join the friendly, fast-paced team and to learn from our Ops Manager Kasia. After spending a year in Wandsworth Town, she became our youngest General Manager and has recently been promoted to Cluster Manager for Wandsworth and our newest site at Battersea Power Station.

    Claudia is super-talented and when she’s not slinging espresso shots, she spends her time singing. After almost three years with Over Under, Claudia has sung at multiple OU events and even has an OU tattoo. She’s built a fantastic high-performing team and we’re extremely lucky to have her.

Catia Gomes - General Manager, Over Under Rhyaid

  • Catia joined us at the beginning of 2021 as Assistant Manager in our Ladbroke Grove store. Six months later, she was promoted to General Manager and moved to our Clapham store where she built a fantastic, high energy & high-performing team.

    Catia was looking for her next challenge and when we started working on our first Over Under franchise in Saudi Arabia, Catia made her interest known. Catia has since moved to Riyadh, joining our franchise partner in early 2022, and is General Manager of the Over Under store, which will open in Saudia in late 2022.
